The Perfect Mother’s Day Cake Recipe

The perfect Mothers Day cake recipe

When it comes to baking for your mum on Mother’s Day, a classic vanilla sponge cake is always a favourite. This mothers day cake recipe is super easy and only requires a few basic ingredients, which makes it perfect for beginner bakers!

To make the perfect mothers day cake sponge, you will need:

200g caster sugar
200g butter (softened)
4 large eggs (beaten)
200g self-raising flour (sifted)
1 tsp baking powder
2 tbsp milk

STEP 1
Start by heating the oven to 190°c (fan) / gas mark 5.
Grease two 20cm cake tins and line with non-stick baking paper.

STEP 2
In a large bowl, beat the caster sugar, softened butter, eggs, self-raising flour, baking powder and milk together until you have a smooth, soft batter.

STEP 3
Split the mixture evenly between the tins, smothing the surface down with a spatula. You can tap the tins gently to remove any air bubbles that may be trapped in the mixture.

STEP 4
Bake for 20 minutes until the cake is golden and the sponges spring back when touched. Insert a skewer into the centre of the cake to make sure it’s baked all the way through. If it comes out clean your cakes are baked. If not, pop them back in the oven for a few more minutes.

STEP 5
Carefully flip the cakes out onto a wire rack and leave to cool completely.

For your mothers day cake filling you will need:

100g butter (softened)
140g icing sugar (sifted)
A few drops of natural vanilla extract. We love the vanilla from LittlePod in Devon.

STEP 6
To make the buttercream filling, beat the butter until smooth, light and creamy, then gradually beat in the sifted icing sugar and vanilla extract.

STEP 7
Spread the buttercream over the top of one of the sponges and add the other sponge to the top. Then finish with your mums favourite toppings.

The perfect decoration for your Mother’s Day cake

For the top of the cake, you can either simply cover with a light dusting of icing sugar (great for beginners), or you can use a piping bag and tips to create textured patterns or form different shapes and designs with buttercream. Drip cake are a popular choice of cake decoration at the moment.

Next, you can get creative with toppings! Use fresh berries, coloured sprinkles, chocolate chips, nuts, meringue, sweets, or anything else you can think of to add texture and flavour to your cake.
